This pioneering technique begins with meticulous hand-selection of only the ripest cherries, chosen specifically for their high Brix scores and optimal sugar content. These carefully curated cherries are the foundation of what comes next.

    Unlike traditional fermentation methods that rely on water, the lactic anaerobic process uses no water at all. Instead, the selected cherries undergo a controlled anaerobic environment where their natural sugars are transformed into lactic acid. This precise chemical transformation is what sets this process apart—it intensifies aromas, deepens sweetness, and develops the complex, distinctive flavors you'll experience in every cup. Once fermentation is complete, the coffee is dried entirely in the sun, preserving the quality and unique characteristics developed during processing.

    Our coffee comes from Tarrazú, Costa Rica's most prestigious and highest-producing region. Granted Denomination of Origin status in 2019, this canton is renowned for its distinctive cup profile: fine acidity paired with a full, rich body. Grown at altitudes between 1,250–1,750 meters, the beans benefit from Tarrazú's rich red clay soil, humid climate, and consistent tropical temperatures averaging 24ºC—ideal conditions that nurture exceptional coffee.

    Processed by Beneficio San Diego, Central America's most modern mill, this coffee reflects a commitment to quality over quantity.     Well THERE you go! Claw Coffee Roasters...YOU are the real MVP! Today's coffee #shoutout goes out to Claw Coffee Roasters out of Scarborough, Maine! I LOVE supporting local businesses so this was a no brainer. To make things BETTER, i saw they had a roast i thought only a few others carried...my obsession from a few years back and nearly impossible to get since the Costa Rica Tarrazu (lactic anaerobic fermented)! Low acid, medium body with a sweet enjoyable as HELL taste! If you have NEVER tried this blend you are really doing yourself a disservice. With tasting notes of caramel, lime, marzipan, cherry there is LITERALLY nothing to hate about this coffee. Claw Coffee has really knocked this one out of the park. I placed my order on Mon, Aug 17, 10:16 PM. I received my shipment on Thursday Aug 20, 9:00am. Super fast for small-batch coffee! The bags are sealed super tight to lock in the freshness. I ordered whole bean, although they will grind it to your desired preference. Now let's talk about PRICE. $16 dollars for a POUND of beans. Are you KIDDING me?!?!? That is downright CRIMINAL!!! You guys should be brought out into the streets and made to publicly apologize for selling this at that price point!! It is worth two times that EASILY!!! I DARE you to walk into a grocery store and buy a QUALITY coffee for less!! The fact that Claw Coffee Roasters is able to bring THIS blend to you at that price proves they are working with Santa Claws (see what I did there) because it is an absolute GIFT! All kidding aside, the price is crazy good, guys! You won't find a better deal for quality coffee. PERIOD. Last but not least, the service. From the handwritten thank-you note, to the sticker they included in the box, to the printed information page they include that provides information on the region the coffee comes from and other great tips, they really just knock it out of the park. Claw Coffee Roasters has earned a NEW lifelong customer thanks to all of this and so much more (PLEASE do NOT get rid of this roast, guys!)     It was wonderful to stop into the roasting space and chat with you all about coffee and your growth over the years! Made me happy to be able to be there in person this time rather than just ordering online and having it sent to southern Vermont (even though that's great too!).
