This pioneering technique begins with meticulous hand-selection of only the ripest cherries, chosen specifically for their high Brix scores and optimal sugar content. These carefully curated cherries are the foundation of what comes next.
Unlike traditional fermentation methods that rely on water, the lactic anaerobic process uses no water at all. Instead, the selected cherries undergo a controlled anaerobic environment where their natural sugars are transformed into lactic acid. This precise chemical transformation is what sets this process apart—it intensifies aromas, deepens sweetness, and develops the complex, distinctive flavors you'll experience in every cup. Once fermentation is complete, the coffee is dried entirely in the sun, preserving the quality and unique characteristics developed during processing.

Our coffee comes from Tarrazú, Costa Rica's most prestigious and highest-producing region. Granted Denomination of Origin status in 2019, this canton is renowned for its distinctive cup profile: fine acidity paired with a full, rich body. Grown at altitudes between 1,250–1,750 meters, the beans benefit from Tarrazú's rich red clay soil, humid climate, and consistent tropical temperatures averaging 24ºC—ideal conditions that nurture exceptional coffee.
