Tucked within the celebrated Yirgacheffe region at elevations of 1,900–2,200 meters above sea level, the village of Chelchele is known for producing coffees of remarkable quality and distinct character. Here, coffee trees grow beneath the natural shade of Enset, Albizia, Acacia, Militia, and Polyscias trees, thriving in rich, clay-based soils that help shape the region’s signature profile. This latest offering from Azeb Tadesse Coffee Supply is sourced from smallholder farmers and plantation estates, all cultivated using organic growing practices.

Ethiopia is where coffee was first discovered by a goat herder named Kaldi. Kaldi noticed that his goats were eating the coffee cherries and would get so much energy and would not sleep. At Claw Coffee it's tradition that we pour out our first sip (very small sip) of this roast out of respect for Kaldi and his goats. This one's for Kaldi!
