About The Honey Process:
The honey process originated in Costa Rica and has since spread throughout Central America. In this method, some or all of the sticky mucilage—often called “coffee honey”—is left on the parchment during drying. This allows the natural sugars to infuse the bean, creating a sweetness reminiscent of natural-process coffees while maintaining balance and clarity.
In the Tarrazú region, where the average farm size is just three hectares, this distinctive honey coffee is produced by a community of smallholder farmers who deliver their harvest to the San Diego wet mill. During harvest, farms are carefully selected based on overall condition and the quality and ripeness of their cherries.
Chosen for its exceptional cup profile, this coffee showcases the artistry and complexity of honey processing—no two honey coffees are ever exactly alike. The process begins with strict selection of perfectly ripe cherries. After depulping, the mucilage is intentionally left on the beans to enhance sweetness before being slowly and evenly dried on African beds or patios. The result is a uniquely crafted coffee with depth, character, and remarkable balance.
